We’ll share the recipe for Mi Quang ga (Quang noodles with chicken), which is the most popular version. That said, you can also find other delicious variations made with different meats like beef, fish, frog, or pork.
Start by marinating the chicken in a mixture of two-thirds of the turmeric powder, half of the shallots, minced garlic, fish sauce, and salt. Let it soak up those flavors while you prepare the rest.
Next, heat a pan over medium heat and add some oil. Toss in the remaining shallots and sauté them until they become fragrant and slightly golden. Then, add the marinated chicken to the pan. Stir everything together. Sprinkle in the remaining turmeric and mix well. Once the chicken is cooked through, pour in the chicken broth and let it simmer until the flavors meld together. Taste and adjust seasoning if needed, then turn off the heat.
To serve, place some Mi Quang noodles in a bowl, top it with the cooked chicken and quail eggs, and ladle in the broth. Finish it off with a sprinkle of crushed peanuts, chopped scallions, and a crispy Bánh tráng mè on the side for that perfect crunch.
To eat Mi Quang, add fresh herbs and crispy Bánh tráng to the bowl and mix them in. A squeeze of lime juice gives it a nice flavor. If you like, you can also pour some dipping sauce (made from fish sauce and chili) over it for extra taste. Then, enjoy every bite!
